Due to the Christmas period i can’t get one of my cars MOTd until the 4th Jan (booked in for 8.30am) my current MOT expiry date is 2nd Jan, does that mean i can drive on the 2nd Jan until midnight or is it not MOTd on the 2nd.

Correct 
You can’t drive it on the 3rd of Jan but you can on the 4th as it’s pre booked.
In addition the expiry will be until midnight 2359 hours on the 2nd.
