Running temp (logs into my brain) 82° if I remember is about correct for normal.
Stat is fully open at 82c but normal running is 85 to 90
Lesson learned with thermostats now.
The one that came out had somehow dislodged its seal and was always open a little.
The removed one on the right - with a rubber seal vs the genuine Mazda one on the left ( no rubber seal just a good fitting piston )
Just a final update on this and a possible heads up for other owners.
Car is running spot on now and warms up much quicker ( also stays warmer for longer when parked up )
BUT
A surprizing benefit of the engine running at the correct temp is that the oil consumption that I considered high ( 1 ltr per 1000 miles ) has almost gone completely.
The car has barely used any oil in the last 700 miles.
May be worth changing the thermostat first for those seeing some oil use.
Another benefit is it will use less fuel too now as temp is correct
