To get a clearer idea that the oil level is at the top of the dipstick dry the dipstick and do not push fully home.
Withdraw and you should clearly see the oil level part way up the dipstick as shown below.

The first one one is dipped but not clicked down, the 2nd is dipped and clicked down.
I’ve had the same problem - when the oil is new the dipstick is very heard to read - what I usually do when refilling after an oil & filter change is add the specified amount of oil to the engine then start the car let it run for a few mins to get the oil into the filter etc and then dip the oil about three or four times to get a consistent reading. Obviously if you’ve had it done by a garage then you won’t know how much they’ve put in except from the dipstick! I’ll then check the level every day as the oild gets slightly darker it’s easier to see the level and top up as required. Then it’s just a weekly or two weekly check, but I’ve never had to add any oil between 12,000 mile (1 year) services after the first few days. My 2006 mk3 NC1 has 109,500 miles on it with 96,500 driven by me!
As a footnote on my V5 there is nothing agains the D.2 Type but just says Variant 18F and Version 6. !
Lihop - A lot better photographs. You can see the level is only halfway up the dipstick on the first photo and is at the MAX mark on the second.
As I say the trick in reading this dipstick is to make sure it is wiped dry with a paper towel and then carefully inserting and withdrawing. I also find that I can see the level clearer when in the garage and with the light reflecting off the dipstick.
