The background:
I have a 2003 Mk2.5, which is fitted with the standard 14 inch alloys. One of them is corroded and leaking some air.

My question is:
Will fitting these larger 15” rims / wheels (to replace the current 14” ones) change or alter anything, for example, inaccurate MPH reading on speedo, or place strain on suspension or engine mounts, etc?
Changing to 15" alloys will not disturb speedo provided the overall diameter is approximately the same. So most 14 inch alloys have 60 profile tyres with the 15 inch alloys fitted with 50 profile tyres.
The lower profile makes for a slightly harder ride that would ideally be paired with slightly stiffer suspension than standard.
In your position I would buy a good used set of 15 inch alloys with the 50 profile tyres and try them out before buying new wheels, rubber and possibly suspension.
To suit the speedometer 185 60 14 equates to 195 50 15 with regards to Mazda standard tyre sizes.
My Mk2 has 195 50 15 tyres and feels planted on the road.
I had the 15" wheels powder coated and for a few months I had 14" wheels with 185 60 14 tyres on the car.
The car was nicer and more comfortable on the 14" wheels and tyres but when you threw it round corners, it slid a slight amount, not much at all.
With the 15" wheels and tyres back on it was not as good a ride but was planted when yoy threw it round corners.
The wheel bearings and suspension components will be happy with both combinations.
I’ve got a Mk1 with 14" alloys & was considering the same - but was also looking at upping them to possibly 16".
i appreciate the ride won’t be as good, but would anyone here recommend doing it or should i be sticking with 15" instead?
